                                           Cheery Cherry Cookies
                                         Submitted by Mrs. Rogers (Grade 1)
1 cup packed brown sugar
3/4 cup softened butter or margarine
1 egg
2 tablespoons milk
1 teasspoon vanilla extract
2 cups all-purpose flour
1 teaspoon salt
1/2 teaspoon baking soda
1/2 cup maraschino cherries, well drained and chopped
1/2 cup chopped pecans
1/2 cup flaked coconut

In a large mixing bowl, cream brown sugar, butter, egg, milk and vanilla.  Combine flour, salt and baking soda; gradually add to creamed mixture.  Fold in cherries, pecans and coconut.  Drop by teaspoonfuls onto ungreased baking sheets.  Bake

at 375 degrees for 10-12 minutes or until golden brown.  Yield: 4 dozen.

The bits of red cherries and coconut make these a pretty Christmas cookie.  These cookies are delicious warm from the oven with a glass of cold milk.

                                             Cake-Mix Cookies

1 package any flavor cake mix

½ cup butter

1 egg

Heat oven to 350*.  In large bowl, combine all ingredients at low speed until thoroughly moistened.  Form into 1" balls and place onto ungreased cookie sheets.  Push down slightly with fork.  Bake for 15 minutes or until set.  Makes about 2 dozen

Tips for Yellow Cake Mix:

~add a few drops of food coloring to create colored cookies

~add flavoring such as vanilla or anise for a different taste.
